Ingredients:

1 ripe avocado
1 egg yolk
1 cup olive oil
Salt and pepper to taste

Instructions:

1. Core and peel the avocado and finely chop it into small pieces.
2. Put the chopped avocado and egg yolk into a blender or food processor.
3. Blend the avocado and egg yolk mixture until it becomes a smooth puree.
4. While the blender or food processor is running, slowly drizzle in the olive oil in a steady stream. This process should endure for 3-5 minutes until the mixture thickens.
5. Continue blending the mixture until it reaches the consistency of mayonnaise. If it’s too thin, add more olive oil.
6. Season the avocado mayonnaise with salt and pepper to taste and blend it briefly to combine.
7. Transfer the avocado mayonnaise to an airtight container or jar and store it in the refrigerator, where it can last for a few days.

Additionally, olive oil is a better option than other oils as it is mild in flavor and rich in healthy fats.
